Instructions
- Rinse quinoa well and drain.
- In a large non-stick skillet, heat up olive oil over medium heat. Add quinoa and cook, stirring constantly to let the water evaporate, and toast the quinoa for about 2 minutes.
- Add vegetable broth and water and bring to a boil.
- Lower heat to bring mixture to a simmer. Cover and cook for 10 minutes.
- Add chopped kale and cook for 5 minutes.
- Turn off the heat and let quinoa continue steaming, covered, for 5 more minutes.
- Taste and season with salt and pepper if desired.
Notes
- Think of this recipe as a blank canvas and add spices and herbs as you wish! Eg. Italian herbs or chopped fresh cilantro would be great additions in this.
- If there is still liquid left in the skillet after steaming in step 6, cook for a few minutes longer over medium-low heat, stirring constantly, until all the liquid is evaporated.
- If the quinoa is still a bit hard, simply steam it for a bit longer, adding more water as required.
- Leftovers can be stored in the fridge for 3-5 days.
