Easy Soba Stir-Fry with Chicken

This easy soba stir-fry takes literally less than 10 minutes to throw together. Loaded with veggies and chicken and a delicious low sugar sesame soy sauce, this recipe will become one of your go-to's for when you need dinner in a pinch.

Instructions

  1. In a mixing bowl, combine all sauce ingredients.
  2. Cut chicken breast into strips, and marinade in the sauce for 5-10 minutes.
  3. While chicken is marinating, cook soba noodles according to package instructions.
  4. Drain cooked soba noodles and rinse under cold water to wash off excess starch.
  5. Heat up olive oil in a skillet over medium heat. Add chicken and cook until slightly brown.
  6. Add julienned vegetables to skillet and cook for 3-5 minutes. Stir often and add a little bit of water if needed, 1 tbsp at a time. You want there to be a little bit of sauce but not like a stew!
  7. When vegetables are cooked, turn off the heat and add soba noodles to skillet. Toss until everything is combined. Serve and enjoy!

Notes

  • I didn't specify what vegetables to use in the ingredients because the beauty of this recipe is you can use whatever vegetables you like or have on hand! It's the perfect "clean-out-the-fridge" recipe.
  • I used a mix of red bell pepper, white cabbage, red cabbage, red onion, carrot, corn and spinach.
  • You can use any other proteins you like instead of chicken. Tofu or tempeh would be a good vegetarian substitute.
  • You can substitute soy sauce with tamari.
  • You can substitute maple syrup and stevia with other sweeteners of choice.
