Tiramisu Chia Pudding

Tiramisu flavors in chia pudding form. This aesthetic pudding is delicately balanced, creamy and delicious. It's also really quick to make, vegan and can be made sugar-free!

Instructions

  1. Divide chia seeds, almond milk, coconut sugar and stevia evenly across four jars or containers. Stir each one to combine.
  2. In the first jar, add almond extract, salt and lemon juice. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
  3. In the second jar, add 1 tsp cocoa powder. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
  4. In the third jar, add 1/2 tbsp cocoa powder and espresso shot. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
  5. In the fourth jar, add 1.5 tbsp cocoa powder and vanilla extract. Stir to combine and let set in the fridge, covered, for at least 2 hours or overnight.
  6. When ready to serve, assemble by layering the four chia puddings in a tall glass, starting with the darkest colored one (fourth jar) in the bottom. Top with an optional dusting of cocoa powder and some dark chocolate shavings. Enjoy!

Notes

  • To make this sugar free, you may omit coconut sugar and increase amount of stevia to taste. You may also substitute with whatever sweetener you prefer as well!
  • The lemon juice and salt mimics the flavor of mascarpone cheese. You may omit them and just go with the almond extract if you want. It will still be yummy!
  • The second jar / layer is just there for aesthetic purposes and does not contribute to the flavor profile of the whole dish. You may omit this layer if you wish and just divide the mixture in step 1 into three jars instead.
  • You can make this ahead of time and keep in the fridge in an airtight container for up to 3 days.
