Instructions
- Cut broccoli into florets. Reserve stem for other recipes.
- Process broccoli in a food processor into very small pieces (size of rice grains). It might be easier to do this in a few batches, depending on the size of your food processor.
- In a large mixing bowl, add all ingredients except for olive oil. Mix until combined thoroughly.
- Heat up 1/2 tbsp olive oil in a non-stick skillet over medium-low heat. Spoon a large spoonful of batter into the skillet and flatten slightly with the back of the spoon. Cook for 2-3 minutes on each side.
- Repeat until all batter is used. Adding more oil in between batches if necessary.
- Transfer to serving plates. Garnish with fresh parsley if desired. Enjoy!
Notes
- Don't discard the broccoli stem! You can cut it up and use it in stir fry's, stews or soups.
- You may substitute cheddar with another semi-hard or hard cheese such as jack, colby, or even grated parmesan.
- To make this dairy-free, you may omit cheddar or substitute with nutritional yeast. However, please be gentle when flipping the fritters as the batter will not hold together as well without the cheese as a binder.
- If you don't like the slightly earthy flavor of raw/undercooked broccoli, you may first cook the broccoli by blanching it for 2 minutes in boiling water before processing in food processor and proceeding with the recipe.
