Cauliflower is all the rage these days! These crispy baked buffalo cauliflower bites are tangy, spicy and a delicious alternative to traditional wings. They're sure to be a hit with both vegans and meat lovers!

Instructions
- Preheat oven to 230˚C/450˚F.
- Lightly grease a large baking dish.
- Cut cauliflower into florets.
- In a large mixing bowl, add almond meal, garlic powder, paprika, salt, pepper and almond milk. Mix well until combined.
- Add cauliflower florets into the bowl of batter. Toss until each piece of cauliflower is coated generously and evenly in batter.
- Transfer coated cauliflower to greased baking dish. Spray lightly with cooking spray. Bake for 20 minutes, flipping halfway.
- While cauliflower is baking, combine hot sauce and olive oil in a small bowl. When the 20 minutes are up, brush hot sauce mixture on the cauliflower, then bake for another 20 minutes. Watch them closely for the final 5 minutes to make sure they don't burn.
- Remove from oven and serve with your favorite dipping sauce. Enjoy!
Notes
- Don't discard the cauliflower stem! You can cut it up and use it in stir fry's, stews or soups. Alternatively turn it into riced cauliflower in a food processor!
- If you don't have almond meal you can substitute with gluten-free flour blend or plain flour.
- I used almond milk but you can use your favorite plant based milk of choice.
