Another baked oats recipe? You bet! This time it is in the form of donuts completed with a matcha white chocolate glaze! They do have a different texture than traditional fried donuts, but they are nonetheless still delicious and not to mention easier to make in a home kitchen!

Instructions
Make the Donuts
- Pre-heat oven to 180C / 350F
- In a big mixing bowl, combine almond milk and apple cider vinegar and let sit for 10 minutes. It should curdle slightly.
- Add vanilla extract, maple syrup and oil. Whisk to combine.
- Process quick oats in a food processor or high-speed blender until the texture resembles a fine powdery flour.
- Add salt and baking powder, and blitz to combine.
- Add dry flour mixture to mixing bowl, and gently fold it into the liquid mixture until combined. Do not over-mix.
- Fill donut pan with batter (about 2/3 full).
- Bake for 10 minutes or until an inserted stick comes out clean.
Glaze the Donuts
- Line a tray or plate with parchment paper.
- Chop white chocolate into small pieces.
- Melt white chocolate and coconut oil in a bowl in a double boiler or microwave.
- Sift in 2 tsp matcha powder and whisk until combined.
- Dip a donut in the matcha chocolate mixture and let excess drip off then transfer to parchment paper. Repeat for all donuts.
- Transfer donuts to fridge and let set for 10 minutes.
- Enjoy!
Notes
- Let the donuts cool completely before glazing!
- Adjust amount of matcha powder in the glaze to your liking.
- You may substitute maple syrup with agave syrup or honey.
- The glazed donuts will keep in the fridge for 3-5 days.
