Instructions
- Fill each pitted date with peanut butter. You'll need about 1/2 tsp of peanut butter for each date, depending on the size of your dates. Place filled dates on a plate and chill in the freezer for 10 minutes.
- Put dark chocolate in a microwave-safe bowl. Melt chocolate in the microwave. Alternatively, you can melt the chocolate using a double boiler.
- Line a tray or a large plate with parchment paper.
- Take dates out of the freezer. Dip each one in the melted chocolate using a fork, let excess chocolate drip off, then transfer to parchment paper lined tray.
- Top stuffed dates with some chopped peanuts if you wish.
- Let the chocolate set in the fridge for 30 minutes.
- Enjoy!
Notes
- If you don't like peanut butter, feel free to substitute it with other nut or seed butter.
- Feel free to decorate these with chopped nuts, cacao nibs, or by drizzling some melted chocolate on top!
- I used sugar-free dark chocolate but feel free to use any other chocolate that suits your dietary needs.
- Store these stuffed dates in an airtight container in the fridge for up to 1 week.
